This was pretty good. A bit spicy for my tastes, but it would be great meal to clear the sinuses if someone had a cold. I'll definitely make it again, but I may ease up on the cumin :) The garnish is the best part, absolutely delicious!

Delicious! I made a few small changes (out of necessity) that I think enhanced the flavors. First, I used regular onion and only had a cup. I used 3 cups of sweet red, orange and yellow mini peppers, since I don't care for cooked green peppers. I used fire roasted diced tomatoes and goat cheese instead of queso fresco. I added a little heat with chopped jalapeño in the relish and Mexican chili powder in place of half the chili powder. I also served it with light sour cream. The result was creamy and it had a little goat cheese flavor. I will definitely make this again.

FABULOUS soup! I don't usually like clinatro but do make the relish..it adds wonderful flavors to the soup. We added a dollop of sour cream. I also added a can of black beans. Served it with warm cornbread and somehow the whole pot evaporated before my eyes. I will be adding this to my soup list.

I can't believe everyone in my family ate this soup/stew! They even loved the avocado relish! It did take me quite a while to make it with all of the prep work, but that isn't a problem. I used very low sodium chicken broth and didn't add the extra salt to the vegetable mixture, so we each added a little to our bowls and it really brought out the flavor. I just used low sodium diced tomatoes since I didn't have any fire roasted crushed tomatoes at home. Next time I will add more chili pepper near the end of cooking since it wasn't that spicy surprisingly. Also, I think I will add about 16 ounces more of broth to make it more of a soup than a stew. The kids kept asking for more liquid.

Excellent recipe! I've also made it without the chicken and my family didn't even notice! I just added a can of black beans and more corn. The relish is a 'must', as it makes the soup even more interesting and delicious! Instead of the queso, I use jack cheese which is easier to find.

So yummy! My husband says this is the best soup he's ever had. I followed the recipe exactly, but added cayenne at the end, for a little more heat. Also served with extra limes on the side so that people could add to taste.

I actually really loved it. When I first had seen the recipe it looked delicious. Although, when I saw how much onion was used, I was extremely hesitant. After making it, which wasn't much trouble, except for the onion tears, it was delicious. It went way too fast, I would definitely eat this again. Also, as a side note, my boyfriend and I love spiciness. So we added an additional 2 teaspoons of chili pepper, and it still was not hot enough. So if you love spice, be generous with it.

This soup is outstanding. My husband said it's one of his favorite meals I've ever cooked. I read in the other reviews that the recipe lacks some heat, so I added 1/2 diced jalepeno and about 1/2 teaspoon cayenne pepper and the spice factor was perfect for us. I also topped it with some shredded tortilla strips when I served it which added a nice little crunch. The avocado relish was fantastic, too. Highly highly recommended!

This soup was wonderful. I didn't end up having green onion, so I finely diced a little red onion, and could only find diced fire-roasted tomatoes, but everything else was exactly according to the recipe (with a little extra garlic). I'll definitely be making it again.

Outstanding and then some......as a leftover, I added a handful of white raisins and will serve it over egg noodles. I did serve it over jasmine rice yesterday and it was wonderful. A great recipe for sure.

a few things I had to sub: feta for queso fresco, fozen corn for fresh, and fire roasted DICED tomatoes in leiu of crushed. Was still excellent. I was able to prep ahead of time, too, by pre-mixing the spices and dicing the peppers, onion, and garlic. Yum yum.

I would say this is more of a stoup (stew + soup) because it is so hardy. I did use just a whole pepper for each, and I used a 'steam fresh' bag of corn instead (frozen & cooks in bag). The lime juice at the end is excellent in highlighting the flavors. We had never had queso fresco, but now love it! The relish is delish! It is crazy healthy and I would make it again.

Soup was excellent! I found the use of black pepper as the "heat" of the soup interesting, as usually I use a chili of some kind. I also liked the topping, though I left out the avacado as we don't like it. Made me wish i did, though! Never had queso fresco before, it was wonderful - very very mild. I would make this again, definitely. Pretty simple to make too.

Fantastic soup! Followed the recipe pretty much exact, although didn't measure the veggies - just used one onion, one red pepper, one green etc. Also, used spicy chili powder to give it a little kick and it was perfect! Do not skip the relish, absolutely delish! I will make this over and over, everyone in the family loved it!

This soup is fabulous! One we will definitely make again...I had fire roasted diced tomatoes instead of crushed and one can had hot green chiles in it which added some zing..love it! Did not have the queso fresco, but did not really miss it...great, great, great!

This is a great, hearty soup for a weeknight meal. I followed it to the letter- the relish is a must! The perfect finishing touch. The only thing I will change next time is to add some heat- some red pepper or jalapenos. It's odd that a texmex recipe doesn't have any heat. Still a great soup, though.

This soup was awesome. It is one we will be having often. The directions were very easy to follow. I did make a couple small additions. I added a cup of fresh spinach , a can of black beans and a few sprinkles of cayenne pepper for extra heat. Turned out great!! We talked about next time sprinkling the top with crushed tortilla chips too.

This filling soup is delicious and has robust flavors. Relatively easy to make though i didn't make the relish to save 60 calories and 5g fat. I mistakenly put the lime juice in before bringing to a boil and that didn't seem to change flavors which meld together beautifully. Soup is really rich in vitamins and fiber for those of you counting points, only 6.
