Remember couple of weeks back when I shared about my Crock Pot Garlic Lime Chicken instant-pot-story? Guys, I can still see some spots that I missed on the ceiling… ugh. BUT mistakes are lessons in disguise, and trust me, lesson.learned. I read the manual from front to back, and back to front, and in the end, there’s really nothing to it. Patience is a virtue, one that I must start to practice.

Anywho. Read the manual, friends.

Instant Pot Chicken Zoodle Soup | Easy Chicken Soup Recipe (6)After a few minutes of sautee, we’re going to add a layer of chicken breasts on top + chicken broth, and let all that cook up together for about 15-ish minutes. That includes the time that the instant pot/pressure cooker needs to reach pressure.

  • 4 small zucchini spiralized

Instructions

  • Pour 1 tablespoon of the olive oil inside the pot of your pressure cooker and heat it over medium-high heat.

  • *Start cooking over high heat until you reach pressure, about 6 minutes.

  • Reduce heat and cook at a constant pressure for 9 minutes.

  • Release the pressure; once venting is complete, remove the lid and take out the chicken; transfer chicken to a cutting board and shred it.

If using an InstantPot, stir in the zucchini, cover the IP, and let sit for 6 to 8 minutes, or until the zucchini are softened.

  • Ladle soup into bowls.

  • Drizzle with STAR Olive Oil with Fresh Rosemary and serve.

InstantPot Electric Pressure Cooker Instructions:

  • If using an InstantPot Electric Pressure Cooker: once you seal the lid, set to "Manual" to cook for 9 minutes. Release the pressure; once venting is complete, remove the lid and take out the chicken; continue with the rest of the recipe.

Notes

*I use a stovetop pressure cooker; in automatic electric pressure cookers, there is a count-down feature that automatically maintains the pressure for a certain time.

FAQs

How to add zoodles to soup? ›

→ Follow this tip: Adding noodles to the soup should be the very last thing you do before taking the pot off the heat. Wait until the soup is just about finished, mix in the noodles, and simmer until the noodles are about halfway cooked. The residual heat from the soup will continue to cook the pasta.

Why lemon juice in chicken noodle soup? ›

Not only does acid brighten your soup, but also balance the flavor including the saltiness that comes from the broth (store-bought chicken broth and stock, or bouillon, are typically high in sodium).

How do you make chicken noodle soup thicker? ›

Add Flour Or Cornstarch

Instead, ladle a small amount of broth into a separate bowl and let it cool. Add a few tablespoons of flour or cornstarch to the bowl and whisk until it's blended smooth. Next, bring the soup to a simmer and add the mixture back to the pot. Pro tip: Don't dump in the entire mixture at once.

Should you cook noodles separately when making chicken noodle soup? ›

The most logical approach is: To make noodle soup, add noodles to soup. In other words, cook the noodles in the broth itself, then ladle the whole shebang into a bowl and serve. Not only does this sidestep another dirty pot, but it infuses the noodles with flavor.

How do you cook zoodles so they're not soggy? ›

Tip 5: Don't over-cook your noodles

To avoid soggy and limp noodles, I recommend cooking for only 3-5 minutes (5 if you're cooking more than 1-2 spiralized zucchinis) and tossing frequently. You want a slightly al dente noodle.

When should I add egg noodles to soup? ›

Once boiling, add noodles (either the uncooked homemade egg noodles, or dry store-bought pasta) and cook just until noodles are al dente. If using store-bought noodles, be cautious not to overcook them!

Why do you put vinegar in chicken soup? ›

Whether it's white wine or vinegar, a touch of acid added to the simmering pot will create a richer finished product. That's because acid helps break down the cartilage and other connective tissues in the bones of the chicken, which helps speed up the formation of gelatin in the stock.

Why add vinegar to chicken noodle soup? ›

While adding vinegar won't reduce the amount of sodium in the pot, the sharp tang of this condiment can help equal out the salty flavor on your tastebuds, masking the brininess of an oversalted soup and making it easier to eat.

How to doctor up chicken noodle soup? ›

Seasoning the Soup: If you feel the soup is missing some zing, add a bit more salt. You can also add a pop of flavor with a squeeze of fresh lemon juice, a dash of fish sauce (we use this trick for store-bought stocks and broths often) or Worcestershire sauce.

How do you make chicken soup more depth? ›

Herbs and Spices:Fresh or dried herbs such as parsley, thyme, rosemary, and dill can add depth to the flavor. Bay leaves are commonly used in chicken soup for a subtle earthy taste. Ground black pepper or a pinch of red pepper flakes can add a hint of heat.

Can I put uncooked noodles in my chicken soup? ›

And yes, it does give them a nice flavor. Just be sure you don't add them too soon: it's easy to over-cook the noodles by leaving them too long in the hot broth. With a cream-based soup the added starch adds desired thickness.

Should you cook chicken noodle soup with lid on or off? ›

To thicken a soup, stew, or sauce, leaving the lid uncovered is ideal. "It must be off, or semi-covered, if you are slowing down the reduction process," says Stephen Chavez, chef-instructor at the Institute of Culinary Education.

When to add potatoes to soup? ›

Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add the potatoes, carrots, celery, onion and celery leaves.

Should I cook egg noodles before adding to soup? ›

Should I cook egg noodles before adding to soup? No! For the best flavor and simplest technique, cook dry packaged egg noodles directly in the broth of your soup, without boiling separately in water beforehand. The exception to this is if you're making the soup ahead of time or cooking a very large batch.

How do you keep noodles from absorbing broth in soup? ›

Cook noodles al dente: Cooking the noodles al dente, which means they are still slightly firm when bitten, can help prevent them from becoming overly soft and absorbing too much liquid. It's important to follow the recommended cooking time on the package instructions and not overcook the noodles [3].

Are you supposed to boil zucchini noodles? ›

Never boil your spiralized zucchini noodles!

If you're serving the zoodles in a liquid or sauce, that's ok.

How do you cook zoodles in boiling water? ›

Bring a large pot of water to a boil over high heat, then season the water generously with salt. Add the zucchini noodles and cook until the noodles are crisp tender, 1 to 2 minutes. Use tongs or a spider to immediately transfer the zoodles to a large bowl filled with ice water.
